RESEARCH MINIATURE HEREFORD BEEF CARCASS EVALUATION This report offers an initial look at traditional carcass and meat quality data from two Miniature Hereford steers. By presenting the measurable traits collected from one grain‑finished polled steer and one grass‑finished horned steer processed at the Gordon W. Davis Meat Laboratory at Texas Tech University, we highlight the types of data that can support future evaluations and help further define the breed. Because the findings are based on only two animals and carcass traits are influenced by many production factors, the results should be considered preliminary but useful as a starting point for continued Miniature Hereford research. |
